Dinner: Meatloaf

Nothing like a basic trio of classic American foods to make a wonderful dinner.  But my meatloaf is a little different.  It's a work that emerged from both my family's tradition and long ago vacation to Zimbabwe!  It was in Harare that I first experienced the wonder of ground beef extended with diced apples.  I know, like how utterly random?

So here's how you make my Meatloaf

Combine a small Onion, a stick of Celery, some fresh Parsley and an Egg in a blender.

In a mixing bowl add a cup of Corn Flakes or Total cereal.  Crunch the flakes up a little.  Then add half of an apple diced, 2 tablespoons of Ketchup, the Egg/Onion/Celery/Parsley mixture and a package of ground "meatloaf mix" meat.  Moosh it all together with your hands and form a loaf.  Coat this with Hunts Barbecue Sauce and use the other half of the apple to cut thin slices and lay a fan of then overlapping down the back of the coated loaf.  Bake at 325 for 60 to 75 minutes depended on the ultimate size of the loaf and your oven's particular idiosyncratic ways.
