I do love eggs, scrambled and omelet mostly. Often with a creamy mustard sauce, often with capers. Otherwise I love how oyster mushrooms compliments eggs, but also peppers, and grape tomatoes...and so many other things, too! Like Tuna. Don't knock it, till you've tried it.
