I am a fan of eggs. All the bullshit about cholesterol and all that stuff, eggs are awesome. One of the best ways to eat them is simple, but not simple. Scrambling eggs is simple, however, there is no reason to just have simple scrambled eggs.
One of my favorite iterations is with Oyster Mushrooms, topped with a Creamy Mustard Sauce and Capers!
For the sauce I took a nice Champagne Dijon Mustard, added a little Sour Cream, and then some Whipping Cream to soften its viscosity. The flavor is tart, but light which allows the capers to sing, and not be lost. It's a wonderful confluence of flavors.
