Dinner: Enchiladas!


Filling: Cooked ground Beef, Onion, Corn, Black Beans, Red Pepper and Green Pepper seasoned with Adobo spices, cumin and chili powder.  

Wrapped in soft wheat tortillas.

Topped: Enchilada sauce, freshly diced Tomatoes and Pepper Jack Cheese.

Baked at 350F for 30 minutes.

Garnished with fresh Cilantro.

Voila!
